My Grandma's Toffee Cookies

Buttery, chocolatey, and delicious. This is my Grandma's Toffee Cookie recipe.

Equipment

  • 1 cookie sheet 13.25" x 9.25" rimmed
  • measuring spoons & cups
  • 1 hand mixer or stand mixer with bowl
  • parchment paper
  • 1 offset spatula

Ingredients
  

  • 1 cup butter
  • 1 cup brown sugar
  • 1/4 tsp. salt
  • 1 egg yolk
  • 2 cups flour
  • 7 oz. chocolate chips
  • 1/2 cup chopped nuts

Instructions
 

  • Preheat oven to 350 F and line cookie sheet with parchment paper.
  • Cream together the butter and brown sugar.
    1 cup butter, 1 cup brown sugar
  • Add in the salt & egg and mix until well incorporated.
    1/4 tsp. salt, 1 egg yolk
  • Add flour and mix just until well blended. Spread batter on cookie sheet use lightly greased hands.
    2 cups flour
  • Bake for 15 minutes.
  • Remove from oven and immediately sprinkle chocolate chips evenly over surface. Allow to melt for a couple of minutes then us an offset spatula to spread and smooth the chocolate over the cookie base.
    7 oz. chocolate chips
  • Sprinkle with the chopped nuts and allow to cool completely. Once cooled and chocolate is set, use a large knife or bench scraper to cut into even bar size pieces.
    1/2 cup chopped nuts

Notes

I like to use unsalted butter and semisweet chocolate chips for this recipe. My grandmother liked to use walnuts for the chopped nuts but my husband often requests I use pecans. Thinly sliced almonds also works nicely. And I leave the nuts off entirely when making these for my daughter.
